I have to give Plain Chicken major thumbs up on this recipe!!! This was by far one of the best One Pot Wonders I have made in my kitchen, and in a hurry. Between the soccer practices, homework, and packing up a 2300 square foot house and trying to fit it in to a 1250 square foot house... this recipe was a life saver!!!
Well, of course as you know I have referred to my boys as hobbits. Yes! That's right! Hobbits!!!! I literally feed them and 2 hours later they are asking, "What's for lunch?" and "What's for dinner?" and don't forget, "What's for dessert?" On this particular night I had several boxes packed up of kitchen items including most of the dishes and the pots and pans. So I knew I needed to cook something up that wasn't going to mess up a lot dishes and it all had to fit in the one pot I could find. I LOVE my One Pot Wonder Pinterest Board and I knew there had to be something on there that I could whip up from just the simplest ingredients I still had in the cupboards. I came across this little miracle One Pot Wonder Spaghetti meal that I have pinned several months ago and knew that one day it would come in handy.
It was perfect! The boys loved it and I have to say myself, this was one tasty dish that put a lot of smiles not only my boys' faces, but also on mine.
There are only a couple of tweaks I would recommend. The first time I made this I think it had too much liquid in it at the end. So the next time I reduced the amount of chicken broth. I would recommend only using about 24-26 oz of chicken broth. I also did not drain the fat out of my meat. My Great Grandma Sylvia was from the South and I know no "True" Southern bred woman would drain the fat out of a dish, so I didn't. I can remember watching my Great Grandma Sylvia ladle a huge scoop of lard in to a pot every time she start cooking dinner. And how amazing that she was as skinny as a rail, but we know nowadays that food is grown differently and with all the added pesticides and chemicals, there is no way we could ever cook like that anymore. Or, I guess you could, but you would just be very unhealthy. She also taught me that the fat from the meat adds more flavor to the dishes you are cooking. And of course we all know it adds more FAT as well, but oh well! Life is short and I want to eat good food!
I also am very fortunate to be married to an Italian man. He has taught me how to make sauce from scratch (I'll share soon) and to NEVER use Kraft Parmesan cheese on your pasta! So we use grated Romano. I used to buy it at Trader Joe's and lately it seems like it has no flavor. So I trek over the hill in to the Valley and buy our Romano from San Carlo's Italian Market. When I buy from them I know I can always trust the flavor and the quality of my items. And of course I stock up on bread, roasted red peppers, provolone, and Genoa salami too!

One-Pot Spaghetti {No Boil}
serves 6
Brown the sausage in the bottom of a pot. The original recipe says to use a dutch oven. I really love using my ceramic Le Creuset. It is so nice to be able to brown meats or veggies on the stove top and then pop it in the oven to bake. Once the sausage looks cooked through start adding the liquids, then the spices. Gently stir in the uncooked pasta and let the entire pot simmer for about 15 to 20 minutes. Do be careful to watch the pasta as it will cook quick and then the sauce gets very thick, very quickly.
I suggest at this point to pour a nice glass of wine and enjoy!!!!
